Things to do With Ginger

farwing and our friend David, who was in visiting from out of town. I had been looking for an excuse to use a recipe I'd found in Nava Atlas' Vegetarian 5-Ingredient Gourmet for curry-coconut rice. But then I needed to figure out the rest of the meal to go with the rice. I had a hunk of ginger and I wasn't afraid to use it. To wit, I made the following:

Curried Lentil Soup (OK, no ginger, but curry, so it matched)
Ginger-Cashew Chicken
Honey ginger-glazed carrots
Dessert was tea and ruggelach; I refrained from serving the candied ginger alongside.
