Remind me to talk to you about this sometime. I have a tabletop electric mixer which I use often when baking cakes (e.g. the honey cakes I baked the other night), but although I enjoy baking bread, I've never actually used the dough hooks. I rather enjoy the process of kneading (and I suppose it also helps prove that I don't need to take off my ring when washing :-). Also, I tend to judge the amount of time needed for kneading and the amount of flour or water to add based on the consistency of the dough as I'm kneading it. But if Dough-hook:kneading::hand-mixer:tabletop-mixer, I can see how it would be a great time saver, and might enable me to bake bread more often.
