I've made pareve quiche-like objects, using soy milk or other equivalent milk with the eggs, and tuna instead of cheese (the canned stuff, with a lot of dill), plus other veggies. It was pretty acceptable.

Tofutti American Cheese Slices are a pretty good substitute. You need to adjust the seasonings though as they add the almost gooey cheese-y-ness but not a lot of taste.

Mmmm quiche. I love my quiche with a little zip - I've used Pepper Jack Cheese with good results with onions and roasted peppers.

The yummiest quiche that I make on a regular basis is dilled asparagus quiche with gouda (can also be made with swiss, but I prefer gouda). It's DELISH.

I made one up recently that I like. Make the usual egg/milk mixture and pour it over horseradish hummus, with the vegetables of your choice. I think I used cauliflower and asparagus.

This also works with sharp radishes and regular or flavored hummus and a little mustard.

This is Fugel by the way, dont mean to post anonymous but dont have an ID. I love Blue Cheese (ever since I was a toddler according to my mother) but hard to find good kosher blue cheese and Omri hates it so I dont get to eat it much these days
