Thanksgiving isn't complete without 1) uncomfortable family interactions, and 2) rolls, which are not so much for Thanksgiving day but for making leftover sandwiches the day after.

It's only Thanksgiving Sheni if you're doing another big dinner gathering. (Which I remember doing once when I was a kid and logistics prevented everyone from being together on the same day -- though we didn't call it "sheni". :-) )

We do, though not motivated by yom tov sheni but by fragmented families. (I'm assuming that by "Pesach Sheni" you mean the second day of yom tov and not the make-up Pesach" that comes a month later. If you meant the latter, I've got no idea how that should be handled these days.)

Pesach Sheni is indeed the one a month after Pesach. The day after the first day of Pesach is just the second day of Pesach. And, as on the day after Thanksgiving, on Pesach Sheni we eat leftovers from Pesach, in the form of matza.

In addition to it being Buy Nothing Day, the day after Thanksgiving is also the ein ma'arbevim simhah be-simhah celebration of adjacent birthdays. (Though I suppose that under tadir ve-she-eino tadir, tadir kodem it's just plain old erev/Shabbat.)
