Use of a pepper mill on Yom Tov, yes or no?

(I've ground some ahead of time, but I'd like to know anyway. Not usually an issue, because I know it's asur on Shabbat and I have ground pepper for chametz for cooking on Yom Tov.)

Shemirat Shabbat k'Hilchata says it's preferable to do it before Y"T but if necessary it's permissible b'shinui.

The way it was explained to me was that one can grind something on Y"T if it would lose its quality and be less fress if it were ground before hand. For example, one cannot grind salt on Y"T because salt doesn't lose its flafor. But one can grind herbs. I don't know enough about pepper to know whether it would lose its flavor during Y"T. of course I am answering this after Y"T has started, so it won't do any good.

Not really relevant but I seem to recall something about coffee being grindable because it's so excellent and wonderful, unlike other things. Presumably, the other things not being grindable. But I see someone already cited chapter/verse, so never mind. I just thought it was interesting that coffee was in its own halachic category.
