How about black bean salad:
1 can black beans
1 medium tomato, diced
1 red pepper, diced
1/2 red onion, sliced fairly small
juice of 1 lime
cumin and salt to taste
cilantro
optional: sour cream, crumbled corn chips

Green beans! They should finally have some at the market this week, too. Either do your famous roasted green beans, served cold, or steam them lightly and dress them just before serving with soy sauce + OJ + canola oil + sesame oil (even better if you reduce the soy sauce and OJ mixture into a thicker syrup beforehand, and even even better if you do that step with a couple of sliced of candied ginger in the pot).

It's less a recipe and more a melange. I patterned it on the gazpacho that a friend used to make for us, but he puts in pickles and I don't. But I'll be happy to post my ingredients and method once I've found out what's available veggie-wise.

The roasted marinated green beans are always a big hit. And the garlic-ginger broccoli was also a big hit (if that's the recipe you're thinking of). I've made it a couple of times now.

I've only started exploring recipes from it, but I've liked what I've found. I was on a quest for a pasta sauce without tomatoes, and this one fit the bill perfectly.

you could also make black bean and corn salad, which is pretty much the same thing except with a can of corn instead of tomato, and with some red wine vinegar to taste. dunno how well it goes with challah, tho....
